Super Bowl Snacks - Alberta Eats

I'm spending a lot of time on Pinterest these days and the tasty treats that everyone is pinning for Super Bowl snacks has me licking my lips! Here's just a sampling!

 Buffalo Chicken Bites

Ingredients:

  • 3 strips bacon
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • 1 cup chopped cooked chicken
  • 4 oz. cream cheese
  • 1/4 cup hot wing sauce
  • 2 boxes Athens Mini Fillo Shells
  • 1 oz. crumbled blue cheese
  • chopped celery leaves for garnish

Directions:

  1. Heat a skillet to medium-high. Add the bacon and brown for 5-7 minutes. Remove the bacon and crumble when cool.
  2. Add the celery and onion to the bacon grease. Saute for 2-3 minutes to soften, then add the cream cheese. Allow the cream cheese to melt a little, then mix in the chicken and hot wing sauce. Mix well.
  3. Spoon the warm chicken mixture into the phyllo shells. Then sprinkle the tops with crumbled blue cheese, bacon, and celery leaves. Serve warm or at room temperature.

 Southwest Veggie Nachos

Ingredients:

  • Vegetable oil cooking spray
  • 6 ounces baked tortilla chips
  • 1 can (15 ounces) low-sodium black beans, rinsed and drained
  • 1 green bell pepper, diced
  • 1/2 cup frozen corn, thawed
  • 1/4 teaspoon ground cumin
  • 1/4 cup sliced black olives
  • 3 tablespoons pickled jalapeƱo slices
  • 1 1/2 cups reduced-fat shredded Mexican blend cheese
  • 4 large plum tomatoes (about 12 ounces), chopped
  • 1/2 cup chopped red onion
  • 1/4 cup cilantro, chopped
  • 1 teaspoon fresh lime juice
  • 1/2 avocado, diced

Directions:

Heat oven to 425°F. Coat a baking sheet with cooking spray; spread chips evenly on sheet. In a bowl, combine beans, pepper, corn and cumin; spoon over chips. Top with olives, jalapeƱos and cheese; bake until cheese melts, 5 to 6 minutes. In same bowl, combine tomato, onion, cilantro and juice; gently mix in avocado. Serve nachos topped with salsa.

Per serving: 315 calories, 10 g fat, 3 g saturated fat, 41 g carbohydrate, 10 g fiber, 15 g protein

Guacamole with Veggie Dippers

Ingredients:

- Peeled, mashed avocados
- Diced tomatoes
- Garlic
- Lemon or lime juice
- Onion
- Diced cilantro

Directions:

Opt for serving celery sticks, baby carrots, cucumber spears or whole wheat pita over low-nutrient tortilla chips.
Avocados are high in monounsaturated fats, a healthy type of fat that has been shown to reduce belly fat. This fabulous fruit can also give you shiny hair and glowing skin. Avocados are full of fiber, potassium and vitamins C and E.
